Mango kulfi without the shortcut.

Reduce the milk yourself. Skip the condensed-milk hack. The 25 extra minutes are why your grandmother's kulfi tasted different from the kind in a foam tray.

Ingredients (8 kulfis)

  • 1 L full-fat milk
  • 60 g sugar
  • ½ tsp cardamom + saffron in 2 tbsp warm milk
  • 300 g Devgad Alphonso pulp (2 Double A)
  • 2 tbsp chopped pistachios
  • 8 matkis or kulfi moulds

Method

  1. Reduce milk 25 min to ~400 ml.
  2. Sweeten + flavor.
  3. Cool, then fridge 30 min.
  4. Fold pulp + pistachios.
  5. Pour, cover, freeze 6+ hours.
  6. Warm-dip and unmould.
