Ingredients (8 kulfis)
- 1 L full-fat milk
- 60 g sugar
- ½ tsp cardamom + saffron in 2 tbsp warm milk
- 300 g Devgad Alphonso pulp (2 Double A)
- 2 tbsp chopped pistachios
- 8 matkis or kulfi moulds
Method
- Reduce milk 25 min to ~400 ml.
- Sweeten + flavor.
- Cool, then fridge 30 min.
- Fold pulp + pistachios.
- Pour, cover, freeze 6+ hours.
- Warm-dip and unmould.
